SPAM War Breakfast Skillet

Waking up on Saturday morning after a much too enthusiastic night at the Palms, the last thing one wants to do is deal with another 80 SPAMs on the latest Johnson School controversy. The SPAM War Breakfast Skillet is guaranteed to cure your hangover, heal what ails you, help you get through the latest SPAMs, and generally improve your outlook on life.
Ingredients:
2 potatoes, chopped up
1/2 onion, chopped up
1/4 green pepper, chopped up
1/4 red or yellow pepper, chopped up
2 teaspoons oil
1 can SPAMĀ® luncheon meat, chopped up
4 eggs
1/4 teaspoon dried basil
dash salt
dash pepper
6 drops hot pepper sauce
1/4 cup cheddar cheese, shredded or chopped up
anything else that looks good in the fridge
Directions:
In skillet, cook potatoes, onion and peppers in oil over medium heat for 5 minutes, stirring constantly. Add SPAMĀ®, cook and stir 5 minutes. Combine eggs, basil, salt, pepper, and hot pepper sauce; stir together. Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set. Sprinkle with cheese; remove from heat. Serves 4-6.
